Soup Tapas Anyone?

Soup is soothing, healthy and fun for people on an aircraft. There must be about 100 various soups from American to ethnic cuisine soups. Especially in the winter, soup is great to serve your passengers. Instead of just offering one soup as a starter for your passengers, think about what it would be like to offer few various soups? Since the new rage is TAPAS, here is a fun way to do SOUP TAPAS.

1. Have the caterer bring you hard crusted sour dough small rolls or any delicious hard crusted rolls in a zip lock bag. Order 3 pieces per passenger.

2. Order four different soups per your passenger count. Remember to consider the size of your microwave. If it is small in dimension size, you cannot fit a Quart of soup in it. You will need to order the soup in Pints. 2 Pints equal 1 Quart. Caterers will only (historically) sell soup by the Quart, so if you are working an aircraft that has a small microwave and you have 6 passengers, order for example:

4 Pints of Potato Leek
4 Pints of Lobster Bisque
4 Pints of Roasted Tomato
4 Pints of Julienned Chicken & Vegetable Soup

3. Place a doyley on top of a China plate.

4. Put on your latex free/un powdered food handling gloves.

5. Cut the tops of the bread off and carefully pull the bread out so you now have a small mini bread bowl.

6. Place three mini roll bowls on one plate per passenger.

7. Heat the soup in the microwave.

8. Ask your passengers which three soups they would like out of the selection that you have provided them with.

9. Pour the hot soup into each roll giving each passenger a selection of three.

10. Add a basket of assorted Carrs crackers or flat breads on the table for them as well or creatively place the crackers on the same plate if using a dinner plate. You can also use a ramekin for the crackers.

* If your aircraft does not have a microwave, you can ask the caterer to bring the soup to 170-180 degrees farenheit and then pour it into thermoses and to label them with the appropriate kind of soup. Upon arrival at your domicile, have the caterer pick them back up so you will not be charged for them. Make sure that they credit your catering bill back for the thermoses. If you like doing soup and do not have a microwave, invest in thermoses for your aircraft. *
